It all began with a simple idea: bring the authentic, sun-kissed flavors of coastal Mexico to families across the United States.

Our founders drew inspiration from the vibrant food culture of the Baja California coast — where fresh fish tacos, handmade tortillas, and slow-roasted meats are a way of life. They believed that fast food could be fresh food, and that every guest deserved a meal made with real ingredients and genuine care.

2003

The First Location Opens

Costa Vida opens its doors in Saint George, Utah. Founders Dave and Brad Nielson introduce their vision of fresh, coastal Mexican food to the community — and the response is overwhelming from day one.

2007

Expansion Across Utah

Riding on community love and word-of-mouth acclaim, Costa Vida expands to multiple locations throughout Utah, bringing the fresh coast experience to thousands of new guests each week.

2011

Franchise Program Launched

Costa Vida launches its franchise program, allowing passionate food entrepreneurs across the United States to bring the costavida experience to their own communities. Quality standards remain uncompromising.

2015

Coast to Coast Growth

Digital & Delivery Expansion
